It is possible to do so. I imagine that the chips are a bit expensive in 
single unit quantities. 

I see that the AL250 will do 16 and 24 bit color and the AL251 will 
do only 16 bit color. The 250/251 are more designed to take 
Interleaved video and convert to 16/24 bit color.

Still interesting.
