There are probably other alternatives out there, but one option is my 
own Retro-Printer module - www.retroprinter.com

This connects to a Raspberry Pi and acts as a centronics capture device 
- it captures the data from a centronics cable, and converts it to a PDF 
for either electronic storage, or printing to a modern USB / network 
printer.

The v3 module does not work with the later Rapsberry Pi 3 Model B+ (or 
Pi 4), but starts at £37.50.  The later v4 module works with the later 
Raspberry Pis, but costs £75

Our software then emulates various printer standards: HP, PostScript, 
Epson, Printronix, IBM, Tandy DMP, Plain Text
