I wish there was!   :)

I don't think "schematic" is the right word. The custom chip is some
sort of "programmable at the factory" device (I don't know exactly)
but what is possible (and I don't know why it hasn't been done yet) is
to create a schematic of the CoCo3 prototype which has the GIME using
descrete logic parts (plus a few custom PAL chips).
