With the later and still manufactured 68000, it supports being wired to 
start in 8 bit bus mode.  The only real differences between that and the 
68008 is that you have a 64 pin rather than a 48 pin package and can 
actually address 16M rather than 1M RAM.  I personally would go with a 
recent 68k.
