Is this planned to be a Class I device? Would expect up to 300 feet then 
(~100m). Should be >= Bluetooth V1.2 to allow Adaptive Frequency Hopping 
spread spectrum transmission, which makes it less interference-prone if 
static HF sources (e.g. WLAN) in the 2.4GHz band are present.

Have you thought about providing both 9-pin RS-232 serial connector AND 
Bluetooth? Maybe selectable by a switch at tha pack?
