Using a small computer to do all the printer driving with a script or
program to capture and process the CoCo info is about the best oyu can
do. Drivewire allows printing, IIRC, by doing pretty much just that, and
you also get a mass storage device. But if you wanted it solely for
printing there are several $150 or so mini/micro industrial PCs and a
couple SBCs that have one or two COM (9 pin serial) ports -- a few under
$100 if you don't mind using Alibaba or AliExpress (direct from China).

$100-$150 serial to parallel printer converters were common in the
CoCo's heyday... now you can have a lot more! That's also why I had a
printer with a serial port or a RS printer with a port for the CoCo...
One of the little machines don't take up a lot of room like a used
laptop or desktop would (if you can find a good working old laptop with
a serial port!). The 20 year old IBM Thinkpad T30 supposedly had a real
serial/com port. Wouldn't be running it off a battery anyway.
