I am using a Raspberry Pi 3 myself in headless mode.  I also use DriveWire
4 server in server mode only without the GUI.

The Raspberry Pi's seem to run a bit faster without the X11 overhead.  So
if you plan on using the Raspberry Pi as a little server box tucked away in
a corner some place I would try to set the stuff up for headless mode and
just SSH into it when you need to make changes to it.

Just my 2 cents worth :|
