Are you primarily looking for information on how to deal with the analog signals and convert them between digital and analog or how to encode/decode?  It's basically a form of Frequency Shift Keying that is well described in the CoCo Tech Manual on page 32.  I can get you a copy of that page if you don't have it.

The best way to deal with this type of data is to detect zero crossings and their timings.  The fact that a DAC is used in the CoCo to create these signals is merely to facilitate their analog recording to tape.  Otherwise, you can just consider them as square waves.
