How about a small (2-4KB) serial I2C/SPI EEPROM on there for saving game 
data? Can you fit an I2C/SPI controller in the CPLD you're using? Or 
worst case, you could bit-bash from the Coco...

Also, will your PCB fit inside the new cartridge cases?
