I dunno Ward, the last one I had, 40 years ago on my first 
mother-in-laws table on a cotton farm near Blythsville AR, was pretty 
dark and greasy.  There really wasn't enough to go around and I had 
fat to spare (still do, even more than then :( ), so I just sampled 
it, not bad though, just greasy...
