That is a very cool idea. I still have my original CoCo 1 and CoCo 2 in their original boxes, and it would make sense to repurpose them for emulator use since not using them anyway. (My CoCo 3 is set up.)
And actually, there are cheap Internet of Things modules that support Bluetooth and can appear like a keyboard. Something like that hooked under the CoCo keyboard could make it work, without a physical cable linked to the modern computer.
