Audacity is certainly the go-to tool for capture.
If you still have problems and really want to learn about the Dragon/CoCo
tape format, Roberto Carlos Fernandez Gerhardt (or just robcfg) wrote
a tool for low-level editing of bad captures:

I seem to remember it not working too well under Wine, but if you have
a Windows box, it might prove useful.
