I believe most modern TVs have dropped S-VIDEO support, most likely due to
lack of popularity. Today, it typically goes composite, component, VGA, and
HDMI for well equipped displays. Composite is obviously only a minor step
up from RF, but the ubiquity of the connection over the years I think has
made it a necessary evil.
For me, if a system has composite, I typically just go straight to a
monitor or TV. If it has S-VIDEO, I typically plug that into an HDMI
adapter for convenience since a smaller portion of my displays have that
input. Nearly every platform benefits mightily from doing S-VIDEO rather
than composite, but for what it's worth, I've never seen such a dramatic
improvement as I did with the Nintendo 64. Certainly seeing this CoCo 1
modded for S-VIDEO is extremely impressive as well.
