I would vote for Debian too. It is the universal operating system after all
:)

Any knowledge you acquire on Debian can be applied to so many places (so
many distro based on Debian, like Ubuntu and Mint).

Debian runs on anything with a processor, even the RaspberryPi.

For our project, we need something lightweight, like LXDE : similar to
windows (pre-8) and light enough that it is the default on Raspebian.

The main question I have is : which emulator should we use ?

For those that hate Unity, you can easily replace it with KDE or any other
you want.
On my laptop that came pre-loaded with Ubuntu, I just typed this command :
# sudo apt-get install kubuntu-desktop

Unity is almost as bad as Windows8 :c)
