Gang,
I've been doing a lot of reading today and trying to figure out what distro
would be the easiest to use.
It looks to me like Ubuntu will work well with Remastersys if we decide to
use it.
Debian will work too but you have to make sure that certain modules are not
in the kernel.
The only thing I don't like about Ubuntu is the Unity desktop, lol.
This is only my observation and nothing is engraved in concrete for our
project. :)
I think we should call this the "CoCo Linux Live CD/USB Project"
Here is the list of volunteers we have so far:

Keith and Marc, please contact each other and discuss what web site is
available to host our project

I think the best base would be Mint or Ubuntu to get the best hardware
compatibility. Modifying the live iso is pretty easy, you just mount it then
chroot in it. I've done that a couple years ago with knoppix.
I have 14 years experience using Linux, my work laptop is Linux and my job
is building Linux kiosk so I think I can help with that project.
Let me know how I can help.
And I can host the iso on a server hosted at iWeb.
I really like the idea of having a full featured coco on a bootable USB key.
