A few years back I created an SPI interface for the CoCo using an Atmel
CPLD. Specificially I built the interface for use with MMC/SD cards, but
using the SPI bus to talk with Ethernet or other micro controllers is not a
problem.
The good thing about SPI is once you have an CoCo to SPI interface you can
hook all sorts of cool things up!
